Sweet, Tasty and oh so EASY! This Easy Corn Pudding Recipe will soon be a “go to” favorite for your family (and even for potlucks because it travels well!).
A friend of mine often brings this dish to potluck dinners and it disappears before you can even say “Corn Pudding with Jiffy Mix“.
My own family reluctantly tried this dish at a family dinner and before you knew it, it was the one dish everyone was going back for seconds and thirds!
Just know that this is a savory pudding, not a sweet pudding like my Banana Pudding.
If you don’t like creamed corn, don’t worry, you won’t taste it! Creamed corn gives this recipe it’s moisture and rich corn flavor. While you could make it without the creamed corn, it won’t turn out the same.
Can I Make This Recipe Without Jiffy Mix?Again, you could try making this recipe with some kind of substitute for the Jiffy mix, however, I have a feeling that the Jiffy Mix is the magic ingredient here that brings the whole thing together.

Can I Freeze This Recipe?Yes, you can freeze this recipe for up to 3 weeks in a freezer safe container. Reheat gently in a 325 oven.
